Fighting food waste and hunger with solar food dehydrators has trasnformed the lives of women in India.
Tens of thousands of pounds of food go to waste each year in India, often because of lack of refrigeration. An innovative company called Science 4 Society has started tackling this problem alongside the issues of poverty and hunger, by employing rural women in western India to operate solar food dehydrators. Excess produce like tomatoes, garlic, onions, ginger, coconut, chilies, and corn are then turned into easy-to-use products and sold to food & beverage industry customers.
The produce, which would spoil quickly in the often extreme heat and humidity, is instead made much safer to store and much cheaper to transport, reducing waste and emissions.
This combination of community, innovation and sustainability has produced a simple yet effective solution to several major local problems. Their efforts can inspire us to find ways to do the same in our own backyard, wherever that may be.
